After completing her studies in Tourism in her native Scotland - at Queen Margaret University, Edinburgh - Sandra Thomson embarked on a career in the hospitality sector which would quickly see her enjoy a fulfilling and exciting progression up to positions on the board of a number of UK PLCs.

After starting her career as Food & Beverage Manager for Forte Hotels, Sandra started her collaboration with Mr Albert Roux, OBE and Legion d’Honneur, first as Assistant Manager for Le Gavroche then as Consultant in Albert Roux Consultancy, advising and assisting UK and international companies on business development through reviews and collaborations in The Netherlands, France, Belgium, Russia, Switzerland, Germany, USA as well as the UK.

After moving to the USA and assisting, very successfully, with the re-launch of the F&B operations at the Sheraton Hotel in Key Largo, Florida, Sandra returned to the UK to become Senior Operations Manager of Catering & Allied and Avenance, then Director of Food and Beverage at McDonalds Hotels before joining Quayside Corporate Service in 2004 as Head of the Leisure Division.

With Quayside Corporate Service, Sandra assisted financial institutions with the review and turn-around of a number of their large corporate accounts, with the specific objective of protecting and increasing their position as stakeholders. 

During this time, Sandra also created her own portfolio of businesses in London where she has a significant stake in a successful group of bars, pubs and restaurants.

Currently, Sandra – as well as working in the Albert Roux Consultancy – collaborates, as advisor, with a very select group of forward looking leisure and investment companies.
